I have
been obsessed with the Deliciously Ella recipe books for a long time now.
Her plant
based, dairy free and gluten free recipes are amazing and allow you to indulge
without the guilt!
Recipe from: "Deliciously Ella" by Ella Woodward
Ingredients:
Should make 10 Cookies
3 Large ripe bananas (400g)
4 tablespoons almond butter
1tablespoon coconut oil, plus extra for greasing
4 tablespoons maple syrup
1 1/2 mug oats (180g)
Instructions:
1. Preheat the oven to 200 degrees (fan 180 degrees)
2. Peel the bananas and place them into a large mixing bowl.
Mash the bananas with a fork until smooth.
3. Add the almond butter, coconut oil and maple syrup and oats
to the mash and stir.
4. Grease
an oven tray with coconut oil, then scoop a tablespoon of the mixture onto the
tray (I use a poached egg holder to make an even cookie shape)
5. Place the cookies onto the tray and bake in the oven for
18-20 minutes until they are golden brown.
6. Remove the cookies from the oven and let them
sit for 5 minutes.

Sprinkle some ground cinnamon on top and then enjoy!
